The Backpackers Pantry Huevos Rancheros is a delicious, spicy egg dish mixed with red beans, green chiles, red bell peppers, cheddar cheese, and onions. Two servings per container. Add 1.25 cups (300 mL) of water. Blend well. Let stand for 10 minutes to allow the beans to rehydrate. Blend again. Cook over low heat in a nonstick pan. Stir frequently. It is very important that after re-hydrating, you cook these in a pan over heat similar to real eggs. They will cook up nice and fluffy!
